It goes without saying that we’re coming into one of the most beautiful seasons of the year here in Central Texas.  As the winds of change blow cooler air across our bedroom windows and raised garden beds, we can’t help but feel transitions brewing.  We’re in the midst of some exciting transitions ourselves, including (but not limited to!) some tweaks to our store hours (we’re open ’til 10pm every night of the week now). Weekly Recipe

Healthy Trail Mix Recipe 

in.gredients

SERVINGS: 8–10

  • 2 cups raw unsalted almonds
  • ½ cup raw unsalted pumpkin seeds
  • 2 tablespoons hemp seeds
  • 1 tablespoon unrefined extra virgin coconut oil, melted
  • 2 tablespoons raw honey
  • ½ teaspoon coarse sea salt
  • ¼ teaspoon ground cinnamon
  • 1/3 cup dried cranberries
  • ¼ cup dark chocolate chips



in.structions

  1. Preheat the broiler
  2. In a medium mixing bowl, combine the almonds, pumpkin and hemp seeds, coconut oil, honey, salt, and cinnamon. Stir until the nuts are coated in the honey and oil.
  3. Arrange the nut mixture on a parchment lined baking sheet.
  4. Roast under the broiler until the nuts are toasted and fragrant, about 1 to 2 minutes. Redistribute and return to the broiler for another minute. Cool on the sheet until the honey has begun to set, 5 minutes. Stir once to make sure all the honey stick to the nuts and not the parchment. Allow to cool completely.
  5. Toss the cooled nuts with the cranberries and chocolate chips. Store in an airtight container for up to a month to lunchtime snacking.

Breakfast Polenta with Chorizo and Cheese

in.gredients

SERVINGS: MAKES 4

  • 1 1/3 cups crumbled queso fresco or feta cheese (about 6 ounces)
  • 1/2 cup chopped fresh cilantro
  • 3 1/4 cups water
  • 1 cup polenta (coarse yellow cornmeal) or regular cornmeal
  • 1 pound yellow corn kernels, cooked
  • 1 pound fresh link chorizo sausage, casings removed
  • 1 pound cherry tomatoes (about 3 1/2 cups)

  • Preheat oven to 425°F. Toss cheese and cilantro in small bowl. Mix 3 1/4 cups water, polenta, and corn kernels in 13x9x2-inch glass baking dish. Sprinkle generously with salt and pepper and stir to blend well. Bake until water is absorbed and polenta is tender, stirring once, about 25 minutes.
  • Meanwhile, sauté chorizo in heavy large skillet over medium-high heat until browned, breaking into small pieces with side of wooden spoon, about 6 minutes. Add cherry tomatoes to skillet. Cover, reduce heat to medium, and simmer until tomatoes soften, about 6 minutes.
  • Uncover; crush some tomatoes with fork. Simmer until tomatoes release juices and sauce thickens slightly, about 10 minutes.
  • Spoon polenta onto plates. Top with chorizo mixture, then cheese mixture.

Ratatouille
in.gredients
Serves 4

  • 1 large eggplant, peeled, coarsely chopped
  • 1 large zucchini (or summer squash of choice), sliced into ¼-inch-thick rounds
  • 2 teaspoons kosher salt, plus more
  • ¾ cup olive oil, divided
  • 5 sprigs thyme
  • 1 large onion, halved, sliced ½ inch thick
  • 1 bell pepper, ribs and seeds removed, coarsely chopped
  • 2 garlic cloves, thinly sliced
  • 2 pints cherry tomatoes, divided
  • Freshly ground black pepper
  • 1 cup torn basil leaves


in.structions:

  1. Preheat oven to 400°. Toss eggplant, zucchini, and 2 tsp. salt in a colander. Let sit 30 minutes, then pat dry with paper towels. 
  2. Heat ¼ cup oil in a large Dutch oven or other heavy ovenproof pot over medium-high. Add half of eggplant and zucchini and cook, stirring constantly, until vegetables begin to take on color, about 5 minutes. Transfer to a medium bowl. Repeat with ¼ cup oil and remaining eggplant and zucchini.
  3. Tie thyme sprigs together with kitchen twine. Heat remaining ¼ cup oil in same pot and cook onion, bell pepper, garlic, and thyme, stirring occasionally, until onion is beginning to brown and is softened, 8–10 minutes. Add half of tomatoes and cook, stirring occasionally, until just beginning to soften, about 5 minutes. Stir in zucchini and eggplant, then top with remaining 1 pint tomatoes (do not stir); season with salt and pepper. Transfer pot to oven and roast until all vegetables are softened and tomatoes have begun to burst, 15–20 minutes.
  4. Remove thyme bundle. Transfer to a serving platter and top with basil.

Spicy Breakfast Bagelini Recipe
As we mentioned up top, the Spicy Breakfast Bagelini is a customer favorite. For the last 3 years it has been one of our best selling sandwiches, and after chatting with our friends over at Goodseed, we all agreed the start of year 4 is the perfect time to share our recipe with the world.

in.gredients:
SERVINGS: 2

  • 2 Fresh Bagels
  • 1 pack of Goodseed Spicy Italian Breakfast Patties (2 count)
  • 1/4 of an Onion (Red, White or Yellow)
  • 4 Tomato Slices
  • 4 Slices of Cheddar Cheese
  • 2 dollops Hummus of your choice
  • Olive Oil
  • Optional Garnish (Cilantro, Parsley, Basil, Bell Peppers, Sweet Peppers)
in.structions:

  1. Place chopped onions in a sauce pan with oil on medium until soft. Break up and mix the Goodseed Patty in with Onions, raise heat to high and stir occasionally.
  2. Slice bagels in half and lay down open faced. Place one slice of Cheddar cheese on two of the bagel halves.
  3. Once patties are cooked, remove from pan and spoon onto bagel evenly until you run out.
  4. Place tomato slice on top of patties along with any garnish or seasoning you’d like.
  5. Finally, add another slice of Cheddar and smear hummus on the other half of the bagel. Place hummus side on top.

Either eat it cold or toast it in the oven. Enjoy!

Goodseed Burger started in 2009 as Goodseed Organic, an organic food trailer in south Austin. Owners Oliver Ponce and Erin Shotwell set out to provide the purest sourced nutrient dense alkaline meals using whole foods and super foods. With influences from macrobiotic cooking, ayurverdic cooking, and alkaline foods, and a passion for the purest sourced ingredients the original hemp burger was born. As Goodseed progressed so did the hemp burger as it soon became the most highly requested item on the menu.

We had too much fun singing last week to not do it again this Wednesday evening.  Look for a recurring bi-monthly sing-a-long come fall/winter! All are welcome, whether you love to sing and play or just enjoy listening.

DIY Tumblers: Upcycling Wine and Beer Bottles
Do you ever think to yourself as you’re tossing that empty wine or beer bottle into the recycling bin, “I bet I could make something out of this!” Here’s a nifty lifehack that does just that.  Be a zero waste hero and reuse before you recycle!

in.gredients:

  • Wine/Beer Bottle
  • String (Thicker is better)
  • 91% Rubbing Alcohol
  • A lighter or matchbox
  • A large bowl
  • Ice
  • Safety glasses

in.structions
 

Before getting started, remember that there will be fire and glass breaking so proceed with caution and always wear safety gear when appropriate.

1. Take your empty bottle and lighter, set aside.
2. Get a string and dip it into your alcohol then wrap it around the bottle tying it off at the end.

3. Light the string on fire and let burn for about 20-30 seconds.
4. Dunk the bottle in an ice bath either in a bowl or the sink.

5. Remove both halves of the bottle, recycle the top.
6. Sand down any rough edges with fine grit sandpaper.

Now sit back and enjoy the feeling of making your own dish ware or share your spoils with a friend as a gift!

In case you haven’t heard, we’re pretty excited about a very special watermelon brown ale from Hops and Grain that we’ll have on tap at our Anniversary Party on Saturday.  This is just one of about 50 reasons why we really dig what they do down there at the far end of E. 6th St.  From employee bike incentive programs, to community involvement and charitable generosity, Hops and Grain is hands down our favorite brewery in town.  And we’ve been working with them since the very beginning, so we couldn’t think of a better team of brewers and beer lovers to share in our Anniversary celebration.  We hope you’ll join us!
