Vegetarian “Chorizo” Migas Breakfast Tacos

The almighty breakfast taco has been a Texas staple for a very long time and it’s something that we Texans generally take very seriously. You can spend hours arguing over the best breakfast tacos in town, or you can make your own amazing morsels at home.  Here’s a quick and easy recipe for duck egg breakfast tacos that’s sure to meet popular appeal:

Yields: 2 Tacos

  • 2 Flour or Corn tortillas
  • 2 Teaspoons of Butter
  • 2 Duck Eggs (They’re bigger than chicken eggs)
  • 1 Cup Grated Cheddar Cheese
  • 1 Handful Tortilla Chips
  • 1/4 Cup Chorizo (Seitan or Regular)
  • Salt and Pepper to taste

in.structions

  1. In a large saucepan on medium heat melt 1 teaspoon of butter and add the 1/4 cup of chorizo, cook throughly.
  2. Add 2 duck eggs, beaten, and lower heat to medium low. Cook the eggs in the chorizo until they’re almost done, don’t cook them all the way through just yet.
  3. Take a a handful of tortilla ships and crush them into the pan, mix throughly.
  4. Top with grated cheddar cheese and cover turning heat to simmer.
  5. In another, smaller pan, melt a teaspoon of butter on high and heat the tortillas until slightly browned.
  6. Add filling to the tortilla and top with your favorite salsa.

Been meaning to make it out for Thursday night Trivia?  Grab a few friends and come on down this week!  The winners (and runners-up) walk away with prizes, and pretty much everyone has a good time.  Note that the content is not intended for young children.  


Zumba With Rhonda

Saturday, May 23rd at 10:30am

Zumba returns to our lawn this Saturday morning! Join Rhonda for some “sassy dancing” and fun tunes to work up a sweat and get yourself a good work out.  Bring comfortable clothing, athletic shoes, and a towel, and get your weekend off to a good start!  The class is free and participants get $1 off kombucha afterward!

Monday, May 25th at 10:30am

Join Sukyi from Fifth Dimension Books – Austin’s Weird, Wandering Bookmobile – along with Octavia the puppet and her friends, as they bring the joy of reading to children (ages 0 to 5). Read, sing, play games, and dance while enjoying the in.gredients lawn and playground. This is a free weekly event

Coffee of the Month: Equal Exchange Rabble Rouser

What’s your favorite part about the neighborhood? There’s a good sense of community here.

How long have you been coming to in.gredients? A least a couple years, pretty much since the beginning.

Why do you come back? It’s a popular place for my friends and I to meet to have playdates/dates.

What are you favorite things about in.gredients? I enjoy bringing my son here and having him enjoy the playscape and the lawn while I get to enjoy a sangria and the great food and treats.

What’s your favorite item? The Lick Ice Cream & Mill-King Milk.
