The resurgence of winter weather makes it even harder to believe that March in Austin is only a few weeks away, but our beloved in.sessions – three days of free live music by bands from all over the world – is right around the corner.  Thursday, March 19th through Saturday, March 21st enjoy a mellower festival from the comfort of your neighborhood grocer.  Skip the chaos and let us bring the music to you.

This week’s deals are all about “The Ultimate Veggie Burger,” a recipe we found recently that you think you’ll dig (see below).  Happy cooking!

Weekly Recipe: The Ultimate Veggie Burger

1/4 cup Flax Seed
2 cups Organic Black Beans
2 cup TVP
1-2 Tbls Tamari
1 cup Finely Sliced Onion
2 Cloves Garlic
1 tbls Smoked Paprika
1 tsp Chili Flakes
1 tsp Cumin
2 tsp Oregano
Basil or Parsley
Salt & Pepper
Olive Oil
A Splash of Red Wine Vinegar
 
  1. Hydrate and season the dried mushrooms and TVP with boiling water and Braggs or soy sauce.
  2. Saute the sliced onion and garlic with smoked paprika, chili flakes, cumin, oregano, salt, pepper. Then splash some red wine vinegar into the pan to deglaze and add some acid.
  3. Mash the cooked black beans into a chunky puree.
  4. Stir together the black beans, sauteed onion/garlic/spice mix, hydrated TVP & porcini mushrooms, fresh basil and parsley, and a few drops of liquid smoke.
  5. Sprinkle in freshly ground flax seed (1/4 cup) which acts as an egg to bind the mixture.
  6. Cover the bowl with plastic wrap and refrigerate for at least an hour (the longer the better – cooling the mixture allows the burgers to hold better).
  7. Dab some olive oil on your hands to prevent the burgers from sticking. Press the mixture into a mason jar lid wrapped in plastic aka my DIY burger mold. This method ensures that the burgers are all about the same size, and will therefore cook at the same time.
  8. Pan-fry the burgers in olive oil until they are crispy and browned on both sides. Then transfer back to baking sheets and bake at 350-400 for about 10 minutes.
  9. Coriander/parsley olive oil. One of the major criteria for an epic burger is ‘juiciness’, which comes from the fat-content of beef (and cooking time of the burger). To replace the saturated un-healthy fat from meat, I  used  monounsaturated olive oil, a healthy fat, to moisten the burgers and make them juicy. Simply spoon 1 tsp of herb oil over each burger.

Wine of the Week: McPherson Sangiovese

This month’s coffee is from one of our favorite non-Austin partners, Big Bend Coffee Rasters out of Marfa, TX. They roast this bright and crisp coffee to Full-City—their lightest roast—to emphasize its pleasant notes of chocolate, orange peel, and nut. Roasted any darker, the beans would lose the delicate brightness that makes it a favorite coffee for breakfast.
