Cashew Maple Chocolate Chip Cookies
Oh my are these tasty! If you’re looking for a special sweet to say “I love you” this weekend, try this one on for size – it won’t disappoint. It’s an easy GFV substitution – just use your favorite non-wheat flour
2 c oats
1 c flour (try a non-wheat flour to make these GF/V!)
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
1/2 c cashew butter
1/4 c butter (softened) or canola oil
3/4 c maple syrup
1/2 c chocolate chips
Combine all of the dry in.gredients into a large mixing bowl. Mix them throughly so the baking soda mixes with the whole batch. Set aside.
Cream together the maple syrup, cashew butter, and butter (or oil) until consistent and smooth.
Slowly mix the cashew butter/maple syrup into the dry mix as you stir to make it consistent. It will get to a point where the spoon or fork feels useless – that’s where your hands come in. Give them a good wash and dig right in, squeezing and flipping to make sure all of the oats and flour get picked up in the mix.
From here you can let it cool in the fridge for later or get right to baking.
Here, we did small nuggets but you can also flatten them to more of a palm sized disk (or heart shape?!). They tend to keep their shape so feel free to get creative.
Finally, with your oven preheated to 325, bake for 12-15 mins or until golden. Each batch makes about 16 cookies so be sure you have a lover or friend around or you may eat them all!

Wine of the Week: 2012 Texas Madeira by Haak Winery
Looking for something extra special for that extra special someone? Look no further than this incredible Texas Madeira made from the blanc du Bois, a white grape grown in their Texas vineyard. It opens up in the glass with aromatic fragrances of dried apricots and peaches covered with caramel. This sensation follows through on the palate with soft, buttery caramel-coated apricots and peaches with a soft hint of green tea and fresh lemons.
Coffee of the Month: Mexico Chiapas
This month’s coffee is from one of our favorite non-Austin partners, Big Bend Coffee Rasters out of Marfa, TX. They roast this bright and crisp coffee to Full-City—their lightest roast—to emphasize its pleasant notes of chocolate, orange peel, and nut. Roasted any darker, the beans would lose the delicate brightness that makes it a favorite coffee for breakfast.
