We hope you were able to enjoy this gorgeous blue-skied long weekend while honoring the legacy of MLK Jr.  We did both by getting our hands dirty in the East Austin soils of the Urban Roots farm for their annual MLK volunteer weekend.  Lead by youth leaders and alongside fellow members of the community, we helped plant over 14,000 onions in their lower field along Boggy Creek (onions we may very well stock come late spring!).  It was an energizing and inspiring morning with an amazing organization doing great work.  They are always looking for volunteers, if you’d like to get in.volved.

in.house recipe

Maybe you’ve noticed more consistent offerings of in.house salads and soups of late.  We have our new “food prep ninja,” Katy, to thank for that.  Here’s something she’s been making recently that we’ve really enjoyed: an apple pecan cole slaw made with organic JBG cabbage, wild-harvested Texas pecans, and organic granny smith apples.  Try a cup next time you’re in, then take home the in.gredients and make a whole batch for your family or roommates – it’s easy!

Granny Smith Pecan Cole Slaw

in.gredients

Serves 4
  • 1 large head green cabbage, sliced
  • 1 Granny Smith apple, chopped
  • 1/2 cup chopped pecans
  • 1 lemon, juiced
  • 1/2 cup rasins
  • 1/2 cup mayonnaise
  • 1/4 red onion, thinly sliced
  • Pepper to taste

in.structions

Prep: 20 min Total: 30 min

Soak the chopped cabbage in a brine (~1 Tbs of salt dissolved in 4 cups of water) for about 15 mins. Drain and set aside.

Add mayonnaise & lemon juice to brined cabbage and mix well making sure all strands are coated.

Add chopped pecans, raisins, chopped apples, onions and toss to serve.

Wine of the Week: Flat Creek 2012 Super Texan

The 2012 Super Texan opens with notes of bing cherry and blueberry with subtle warm vanilla. This intense, medium bodied wine has a full mid-palate highlighted with flavors of plum, blackberry and toasty oak. The balanced acidity and supple tannins carry these flavors into a long finish with a hint of spice. This wine is perfect to accompany wood-fired pizza, pasta bolognese, or pulled pork. This is their signature wine and exemplifies the best of what it means to be a true Texas Wine.
