Let’s be honest, 2015 has gotten off to a shaky start.  The incessant cold and grim headlines have many of us looking for real and metaphoric warmth.  This week we offer a few soup recipes that we hope can bring a little comfort and relief to you and yours.  Sometimes a homemade soup is all you need to turn things around.  Plus, check out this week’s specials for some inspiration to keep up those resolutions!

Hearty Winter Stews

Chorizo & White Bean Stew

Servings: 4

2 tablespoons olive oil, divided, plus more for drizzling
1 pound chorizo (now available!)
1 large onion, thinly sliced
4 garlic cloves, finely chopped
1 sprig thyme
2 15-ounce cans cannellini (white kidney) beans, rinsed
2 cups low-sodium chicken broth
Kosher salt, freshly ground pepper
5 ounces baby spinach (about 10 cups)
Smoked paprika (optional)

Prep: 45 min Total: 45 min
 
Heat 1 tablespoon oil in a large skillet over medium heat. Add sausage and cook, turning occasionally, until browned and cooked through, 15-20 minutes. Transfer sausage to a plate.
Reduce heat to medium. Heat remaining 1 tablespoon oil in same skillet. Add onion, garlic, and thyme sprig. Cook, stirring occasionally, until onion is softened, 5-8 minutes. Add beans and broth and cook, crushing a few beans with the back of a spoon to thicken sauce, until slightly thickened, 8-10 minutes. Season with salt and pepper. Add spinach by handfuls and cook just until wilted, about 2 minutes.
Slice chorizo and fold into stew; add water to thin, if desired. Divide stew among bowls; drizzle with oil and sprinkle with paprika, if desired.

“This coffee from Duromina Cooperative is part of an initiative we have in Ethiopia to work direct at the coop level. We have been involved with Duromina for the past 5 years, selecting our favorite lots to offer on our site. Duromina was formed with the help of a non-government organization that not only coordinated agronomists and managers for each of the coops they work with, but also had a business adviser assigned that helped the cooperative manage their debt, re-invest in quality improvements at the mill, and verifies distribution of income to all members. This is a key position; I have never known a coop to get this kind of expert advice from outside … not in Africa at least. A cooperative can make all kinds of quality improvements, turn out fantastic coffee, and sink deeper in debt all the while. Cooperatives often fail to return a fair and full amount of payment to their farmer-members. Often this is from poor management, and sometimes from graft as well. Duromina has now “graduated” from the NGO program and operates independently with the oversight of various farmer-member leadership groups. The name, chosen by the farmers, has quite a straight-forward meaning: it roughly translates as “Make More Money!” With the solid price we pay the cooperative for their best lots, and their success reinvesting in the Goma area, the name has proved quite appropriate.”
