Daily Recipe: Tomato, Goat Cheese and Fresh Dill Frittata
Sometimes you need a meal that can be on the breakfast, lunch AND dinner menu. A frittata is one of those dishes. This is one of the easiest dishes to make, and you can pass it off as decadent and fancy if need be. Last minute brunch to throw together? Whip up this frittata- it’s filling and beautiful.
If you’re unfamiliar with frittatas, think a quiche without the crust. Frittatas are an easier (perfecting homemade crust can be a challenge) and healthier option. The combination of the fresh dill, sweet tomatoes and salty goat cheese make for a perfect meal.
If you need another reason to make this dish, we got the dill from one of our neighbors. We encourage our green thumbed customers to bring us their produce and we’ll sell it on consignment. Tomato, Goat Cheese and Fresh Dill Frittata

- 8 eggs
- 2 Tbsp non-fat milk
- Fresh dill, chopped
- 1/4 cup goat cheese (or cheese of choice)
- 1/2 cup of tomatoes, chopped (or cherry tomatoes)
- Dash of garlic powder
- Sea salt and cracked pepper, to taste
Preheat the oven to 350 degrees. Oil the round baking dish.
Mix the eggs with the milk and fresh dill until well combined then season with a dash of garlic powder, sea salt and pepper. Pour the egg mixture into the baking dish and place the tomatoes and cheese evenly throughout the mixture.
Place into the oven and bake at 350 degrees for 20 minutes. Remove from the oven and let cool for 5 minutes before cutting. Enjoy!
