COOLHAUS is a triple entendre – a play on three of our favorites:
 Bauhaus, an influential modernist design movement of the 1920′s and 30′s.
 Rem Koolhaas, the famous Dutch Architect and Theorist who challenged the mantra “Form follows function”
 “Cool house,” isn’t that what you’re eating – an ice cream sandwich deconstructed into a cookie roof and floor slab with ice cream walls?
HOW IT ALL HAPPENS
At Coolhaus, we love all types of food and pride ourselves on our creativity and palate. We sit down for a meal and think “Shucks, wouldn’t that make a good ice cream sandwich combo?” True example: pickled ginger radish and wasabi at a sushi dinner became a Ginger cookie and Wasabi ice cream sandwich at the first ever Los Angeles Street Food Festival.
But first and foremost is our dedication to quality and sustainability. Every Coolhaus Ice Cream Sandwich is all-natural, handmade and organic whenever possible. Our dairy is sustainably produced and artificial growth hormone free. We use local and seasonal farmer’s market fresh ingredients. Plus, every ice cream sandwich is wrapped in a customizable, edible wrapper that is all-natural and calorie-free. Talk about being Green! Instead of throwing away your wrapper, you get to eat it! The wrapper can also be printed on with edible ink, which means it can sport your company logo, birthday mugshot, or a message to friends.
With this marriage of creativity and sustainability, we thrive to push the boundaries of sweet and savory by featuring unique ice cream flavors that you can’t get anywhere else, on cookies made with love. Feeling adventurous? Try our Brown Butter and Candied Bacon ice cream on Chocolate Chip cookies. Or maybe our seasonal Olive Oil Rosemary ice cream our version of Brioche cookies will do the trick. Going classic never hurt either – Mies Vanilla Rohe (Vanilla ice cream + Chocolate Chip cookie) or Frank Berry (Strawberry ice cream + Snickerdoodle cookie) are very respectable choices.
We may be slingin’ sammies from a pimped out truck, but we’re all about satisfying your sweet AND savory tooth, one ice cream sandwich at a time.
Natasha and Freya started baking cookies and making ice cream in Freya’s mom’s kitchen in the Fall of 2008. They named the flavor combinations after architects and architectural movements they were inspired by and started experimenting with recipes and testing them on friends. It seemed like a fun art project with “farchitecture” in mind ie food + architecture.
One day it occurred to Freya and Natasha that an ice cream truck would be a perfect way to disseminate their ice cream sandwiches (and architecture dialogue) around the city of LA. The truck would be a nod to the past tradition of the Good Humor man selling ice cream novelties around neighborhoods, but with a modern twist – not to mention the long-withstanding popularity of taco trucks around LA and the rapidly growing infatuation with “gourmet” food trucks. The timing seemed perfect, now all Freya and Natasha needed was a truck!
They found a postal truck on Craigslist and were able to afford it with money they had saved from their other jobs. They prepared the truck and their product for their launch at Coachella Valley Music Festival in April of 2009 where the product was very well received – and when they came back to LA, they had generated a strong buzz and following.
Today, they have a fleet of 4 trucks in LA, 2 trucks and 1 cart in NY, 2 trucks in Austin, 2 trucks in Miami, a newly launched storefront in Culver City, CA.
