Weekly Recipe

DIY Cold Brew Coffee
An alternative to a hot cup of joe that is easy to make at home and saves you a little dough to boot.

in.gredients:

3 oz (by weight) of ground coffee for 32 oz. DIY kit
6 oz (by weight) of ground coffee for 64 oz. DIY kit
12 oz (by weight) of ground coffee for 1 gallon DIY kit
24 oz (by weight) of ground coffee for 2 gallon DIY kit
** measurements are variable to taste **



in.structions
 

1. Add your favorite freshly ground coffee to your Cold Brew Coffee Sock (or any large muslin bag) – ground medium to coarse.
2. Bloom to start (wet grounds thoroughly and let sit for 60 seconds).
3. Fill jar with cold filtered water.
4. Twist neck of filter, wrap tie string around neck a few times and slip neck of filter through glass ring (or fasten muslin bag).
5. Allow to soak in refrigerator or at room temperature:
Depending on size 
6-10 hrs 32oz.     12-18 hrs 64oz.
14-18 hrs 1gal.    16-20 hrs 2gal.
6. Remove filter and rest in mouth of jar to fully drain. 
7. D
ilute with water or your milk of choice according to taste.  You can store cold brew concentrate in the fridge for up to two weeks.

Simple Fridge Pickles

Adapted from Kate Payne’s “Fridge Pickles 101

in.gredients

Serves: 4-5

  • 1 Qt Glass Jar
  • Veggies*
  • Coriander
  • Peppercorns
  • Garlic, Fresh
  • Fennel
  • Cloves
  • Cumin
  • 1 cu Vinegar
  • 1 c. Filtered Water
  • 1 tbs Salt
*Try Onion, Cucumber, Zuchini, Carrots, Jalapenos, Beets, etc*

  1. Wash & cut your veggies and pack tightly into your jar
  2. Add your favorite spices, fresh or dried
  3. Prepare a brine by combining vinegar, filtered water and salt in a medium saucepan. Bring to a boil. Add sugar if you prefer a sweet pickle.
  4. Pour the brine over your veggies to cover and cap the lid.
  5. Place your jar in the back of the fridge for about a week before enjoying!

Weekly Recipe

Marinated Stew Meat with Carrots and Jalapeno Aioli

in.gredients
Serves: 4

Stew 

  • 1 bag of Dear Run Stew Meat
  • 1 bottle of Mother’s Cafe Cashew Tamari dressing
  • 8 large carrots
  • Salt & Pepper to taste

Aioli

  • 1 tbsp Yellowbird Jalapeno sauce
  • 1 large egg
  • 1 cup canola oil (or canola/olive oil mix)
  • 1 tbsp white vinegar
  • 1/4 tsp salt

in.structions

Marinade:
  1. Rinse and pat dry meat (set aside), clean and quarter the carrots cutting lengthwise 
  2. Pour the Mother’s Cashew Tamari Dressing in a large mixing bowl or ziplock bag, add above in.gredients (Let rest in fridge 30 mins to 2 hrs).
Aioli:
  1. In a blender add egg, salt, vinegar and Jalapeno sauce and set to medium speed.
  2. Gradually pour in oil until mixture thickens, cool in fridge.
Cooking & Serving:
  1. Empty the contents of the bag or bowl into a large skillet (cast iron preferred) on high heat.
  2. Mix the beef as you sear the sides for about 5 mins, lower heat, add lid and stir occasionally (15-20mins).
  3. Serve a few pieces of beef garnished with cilantro or avocado (optional), a few of the carrots quarters and a small ramekin of the aioli. Pair with a bottle of Cabernet, GSM or Malbec.

Black Bean Curry

in.gredients

2 Cans Black Beans

1 Can Crushed Tomatoes
1 Garlic Clove, minced
1/2 Onion, chopped
1/2 tsp Fresh Ginger, grated
1 tsp Garam Masala
1/2 tsp Salt, or more to taste
1 TBSP Cilantro, chopped
1 or 2 TBSP Butter, (substitute olive or vegetable oil to make this vegan)
1 Pack Lotus Ramen Noodles

in.structions

  1. In a pot bring water to a rolling boil and add the ramen noodles.
  2. In a large pot, melt the butter (or heat oil if substituting) over medium high heat and add the chopped onion. Saute until the onion is golden brown and beginning to caramelize well, about 8 minutes.
  3. Add garlic and ginger, stir for 15-30 seconds until fragrant.
  4. Add both cans of black beans, the can of Tomatoes, the Garam Masala, and the salt.
  5. Simmer the mixture over medium heat, stirring occasionally until reduced and the liquid is nice and thick, about 15 minutes.
  6. Turn off heat and add chopped cilantro to finish, stir and serve over ramen noodles.

Their milk comes from Stryk Farms in Schulenburg, TX, a grass-fed raw milk that helps create the amazingly creamy texture of their cheese.  A labor of love from multiple generations of the Avellan family, you can read the fascinating (and full) origin story here.  We’re in.love with their cheese and glad to offer it on special this week.

Our hearts go out to all those who’ve suffered damages and losses in this weekend’s flooding.  We experienced some mild flooding along our back entryway and were forced to close early yesterday but we were lucky to suffer no further damages. As we all take stock of the community around us, it’s easy to feel overwhelmed and helpless.  Here are a few ways to get in.volved this week and help out with some worthy recovery efforts:

  • Urban Roots: Their gorgeous 3.5 acre East Austin farm suffered 7+ feet of water in some places, comprimising many of their crops.  They’re looking for extra volunteers all week to help with Operation Farm Rescue 2k15
  • Austin Disaster Relief Network (ADRN): This organization was responsible for many of the effective relief efforts during the Onion Creek Flood a few years back.  Support their current efforts with a donation and keep your eyes on their website for volunteer opportunities.

Minty Peach Salad with Feta

Peach season is upon us! Here’s a quick and easy recipe that features a delightful pairing of sweet peaches with the amazingly creamy and rich feta cheese from Pure Luck.

Salad

  • 2 bags Heart of Gold Salad Mix (roughly torn)
  • 1-2 sprigs of fresh mint, roughly chopped 
  • 1 cup Pure Luck feta cheese (crumbled)
  • 2 just-ripe peaches (medium, cut into 1/4 inch wedges)

Vinaigrette

  • 3 tbsps balsamic vinegar
  • 1/2 cup extra-virgin olive oil
  • 1/4 tsp salt
  • 1/4 tsp cracked black pepper (freshly)

  1. In a large bowl, combine lettuce, peaches, feta, and mint.  
  1. In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper until emulsified.
  2. Pour vinaigrette over salad and gently toss to coat.

Wine of the Week: HaaK Madeira Blanc du Bois

This Madeira is made from the white grape, Blanc du Bois, which is grown locally in their Texas vineyard. It opens up in the glass with aromatic fragrances of dried apricots and peaches covered with caramel. This sensation follows through on the palate with soft, buttery caramel-coated apricots and peaches with a soft hint of green tea and fresh lemons.  This is a must try!

Vegetarian “Chorizo” Migas Breakfast Tacos

The almighty breakfast taco has been a Texas staple for a very long time and it’s something that we Texans generally take very seriously. You can spend hours arguing over the best breakfast tacos in town, or you can make your own amazing morsels at home.  Here’s a quick and easy recipe for duck egg breakfast tacos that’s sure to meet popular appeal:

Yields: 2 Tacos

  • 2 Flour or Corn tortillas
  • 2 Teaspoons of Butter
  • 2 Duck Eggs (They’re bigger than chicken eggs)
  • 1 Cup Grated Cheddar Cheese
  • 1 Handful Tortilla Chips
  • 1/4 Cup Chorizo (Seitan or Regular)
  • Salt and Pepper to taste

in.structions

  1. In a large saucepan on medium heat melt 1 teaspoon of butter and add the 1/4 cup of chorizo, cook throughly.
  2. Add 2 duck eggs, beaten, and lower heat to medium low. Cook the eggs in the chorizo until they’re almost done, don’t cook them all the way through just yet.
  3. Take a a handful of tortilla ships and crush them into the pan, mix throughly.
  4. Top with grated cheddar cheese and cover turning heat to simmer.
  5. In another, smaller pan, melt a teaspoon of butter on high and heat the tortillas until slightly browned.
  6. Add filling to the tortilla and top with your favorite salsa.

Zumba returns to our lawn this Saturday morning! How long have you been coming to in.gredients? A least a couple years, pretty much since the beginning.

Why do you come back? It’s a popular place for my friends and I to meet to have playdates/dates.

What are you favorite things about in.gredients? I enjoy bringing my son here and having him enjoy the playscape and the lawn while I get to enjoy a sangria and the great food and treats.

Austin Give 5% to Mother Earth

We’re participating in this year’s “Give 5%” campaign, so come do your shopping here on Earth Day and support your local grocery store while also supporting some great environmental groups.  


Earth Day Benefit Concert w/ UT

Wednesday, April 22nd, 7:30pm-10:30pm

We’re excited to partner with two UT organizations for a great Earth Day event all about water.  Join Students for Clean Water and The Campus Environmental Center for a concert featuring four student bands and benefiting The Gazelle Foundation.  Hops and Grain will be providing a special keg of Greenhouse Peach IPA, and for every pint sold at the event, in.gredients and Hops and Grain will each donate $1 to the cause.  


Quiz for a Cause

Thursday, April 23rd at 7pm

Come play trivia this Thursday and help support a non-profit organization as Geeks Who Drink hosts their “Quiz for a Cause.”  Donations are not required to play but they do make you eligible for extra prizes (and extra good karma).  Catch you soon, quizmasters!

Wine of the Week: Llano Winery 2012 Cabernet

The 2010 crop was a large vintage for Llano Estacado. As a result, a lot of the wine they made contained more floral and perfumed elements than some of their previous vintages. This Cabernet Sauvignon is one of those wines. Its bright fruit introduction is followed by fresh herbal notes and a hint of mint. The well balanced tannin to acidity ratio makes this a versatile food wine. This blend is composed of 97% Cabernet Sauvignon and 3% Sangiovese. Get it this week by the glass or 10% off the bottle.

Coffee of the Month: Barrett’s Ethiopian Yirgacheffe, Konga


This month’s coffee comes from a Woreda in the Gedeo Zone, Yirgacheffe located in central Ethiopia. These smaller religions are intentionally kept separate to preserve each regions specific taste. After being fair traded to the states they fall in the hands of Barrett’s Coffee Roasters who have added a chocolatey nose and berry flavor with a slight zing. A wonderful breakfast blend and on sale all this month.

Kale, Avocado & Ginger Smoothie

in.gredients

  • 3 handfuls kale
  • splash or two of almond milk
  • Two spoonfuls of White Mountain Organic Bulgarian Yogurt
  • Three tablespoons of Eden Organic Applesauce
  • ½ an avocado
  • 1-2 tablespoons of grated fresh ginger
  • 1 teaspoon of lemon juice
  • 1-2 tablespoons of honey
  • 1-2 ice cubes

Wash your kale and cut off the stems, leaving only the leafy greens for blending. Place in a blender with the grated ginger, almond milk, yogurt, lemon juice, avocado, honey, and ice cubes and blend on high until the kale is completely blended into the smoothie.
