We had too much fun singing last week to not do it again this Wednesday evening.  Look for a recurring bi-monthly sing-a-long come fall/winter! All are welcome, whether you love to sing and play or just enjoy listening.

DIY Tumblers: Upcycling Wine and Beer Bottles
Do you ever think to yourself as you’re tossing that empty wine or beer bottle into the recycling bin, “I bet I could make something out of this!” Here’s a nifty lifehack that does just that.  Be a zero waste hero and reuse before you recycle!

in.gredients:

  • Wine/Beer Bottle
  • String (Thicker is better)
  • 91% Rubbing Alcohol
  • A lighter or matchbox
  • A large bowl
  • Ice
  • Safety glasses

in.structions
 

Before getting started, remember that there will be fire and glass breaking so proceed with caution and always wear safety gear when appropriate.

1. Take your empty bottle and lighter, set aside.
2. Get a string and dip it into your alcohol then wrap it around the bottle tying it off at the end.

3. Light the string on fire and let burn for about 20-30 seconds.
4. Dunk the bottle in an ice bath either in a bowl or the sink.

5. Remove both halves of the bottle, recycle the top.
6. Sand down any rough edges with fine grit sandpaper.

Now sit back and enjoy the feeling of making your own dish ware or share your spoils with a friend as a gift!

In case you haven’t heard, we’re pretty excited about a very special watermelon brown ale from Hops and Grain that we’ll have on tap at our Anniversary Party on Saturday.  This is just one of about 50 reasons why we really dig what they do down there at the far end of E. 6th St.  From employee bike incentive programs, to community involvement and charitable generosity, Hops and Grain is hands down our favorite brewery in town.  And we’ve been working with them since the very beginning, so we couldn’t think of a better team of brewers and beer lovers to share in our Anniversary celebration.  We hope you’ll join us!

S’mores Bars

Don’t have a fire pit or plans to go camping anytime soon but still crave the sweet combination of marshmallows, graham crackers, and chocolate? Look no further than these easy-to-make s’mores bars!

in.gredients

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1-1/3 cups all-purpose flour
  • 3/4 cup graham cracker crumbs
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 5 milk chocolate bars (1.5 oz each)
  • 1 cup marshmallow creme

in.structions

  1. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, cracker crumbs, baking powder and salt; gradually add to creamed mixture. Set aside 1/2 cup for topping.
  2. Press remaining mixture into a greased 9-in. square baking pan. Place candy bars over crust; spread with marshmallow creme. Crumble remaining graham cracker mixture over top.
  3. Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars. Store in an airtight container. Yield: 1-1/2 dozen.

Lauren’s Sunflower Dressing

If you’ve had our in.house chickpea salad recently, you’re familiar with this delicious dressing.  It’s perfect for salads of all kinds.  Developed right here by our beloved Food Prep Ninja, Lauren.  

in.gredients:

YEILDS 6 CUPS

  • 3 C Sunflower Seeds
  • 3/4 C Apple Cider Vinegar
  • 1 C Nutritional Yeast
  • 2 Tbsp of your favorite hot sauce
  • Salt & Pepper to taste
  • 1 C Olive Oil
in.structions

  1. Combine first 5 in.gredients in a blender, blend until uniform.
  2. Slowly add Olive Oil while blender is running until you reach a creamy consistency.
  3. Put in an empty container and refrigerate.

Weekly Recipe

DIY Cold Brew Coffee
An alternative to a hot cup of joe that is easy to make at home and saves you a little dough to boot.

in.gredients:

3 oz (by weight) of ground coffee for 32 oz. DIY kit
6 oz (by weight) of ground coffee for 64 oz. DIY kit
12 oz (by weight) of ground coffee for 1 gallon DIY kit
24 oz (by weight) of ground coffee for 2 gallon DIY kit
** measurements are variable to taste **



in.structions
 

1. Add your favorite freshly ground coffee to your Cold Brew Coffee Sock (or any large muslin bag) – ground medium to coarse.
2. Bloom to start (wet grounds thoroughly and let sit for 60 seconds).
3. Fill jar with cold filtered water.
4. Twist neck of filter, wrap tie string around neck a few times and slip neck of filter through glass ring (or fasten muslin bag).
5. Allow to soak in refrigerator or at room temperature:
Depending on size 
6-10 hrs 32oz.     12-18 hrs 64oz.
14-18 hrs 1gal.    16-20 hrs 2gal.
6. Remove filter and rest in mouth of jar to fully drain. 
7. D
ilute with water or your milk of choice according to taste.  You can store cold brew concentrate in the fridge for up to two weeks.

Simple Fridge Pickles

Adapted from Kate Payne’s “Fridge Pickles 101

in.gredients

Serves: 4-5

  • 1 Qt Glass Jar
  • Veggies*
  • Coriander
  • Peppercorns
  • Garlic, Fresh
  • Fennel
  • Cloves
  • Cumin
  • 1 cu Vinegar
  • 1 c. Filtered Water
  • 1 tbs Salt
*Try Onion, Cucumber, Zuchini, Carrots, Jalapenos, Beets, etc*

  1. Wash & cut your veggies and pack tightly into your jar
  2. Add your favorite spices, fresh or dried
  3. Prepare a brine by combining vinegar, filtered water and salt in a medium saucepan. Bring to a boil. Add sugar if you prefer a sweet pickle.
  4. Pour the brine over your veggies to cover and cap the lid.
  5. Place your jar in the back of the fridge for about a week before enjoying!

Weekly Recipe

Marinated Stew Meat with Carrots and Jalapeno Aioli

in.gredients
Serves: 4

Stew 

  • 1 bag of Dear Run Stew Meat
  • 1 bottle of Mother’s Cafe Cashew Tamari dressing
  • 8 large carrots
  • Salt & Pepper to taste

Aioli

  • 1 tbsp Yellowbird Jalapeno sauce
  • 1 large egg
  • 1 cup canola oil (or canola/olive oil mix)
  • 1 tbsp white vinegar
  • 1/4 tsp salt

in.structions

Marinade:
  1. Rinse and pat dry meat (set aside), clean and quarter the carrots cutting lengthwise 
  2. Pour the Mother’s Cashew Tamari Dressing in a large mixing bowl or ziplock bag, add above in.gredients (Let rest in fridge 30 mins to 2 hrs).
Aioli:
  1. In a blender add egg, salt, vinegar and Jalapeno sauce and set to medium speed.
  2. Gradually pour in oil until mixture thickens, cool in fridge.
Cooking & Serving:
  1. Empty the contents of the bag or bowl into a large skillet (cast iron preferred) on high heat.
  2. Mix the beef as you sear the sides for about 5 mins, lower heat, add lid and stir occasionally (15-20mins).
  3. Serve a few pieces of beef garnished with cilantro or avocado (optional), a few of the carrots quarters and a small ramekin of the aioli. Pair with a bottle of Cabernet, GSM or Malbec.

Weekly Recipe

Black Bean Curry

in.gredients

2 Cans Black Beans

1 Can Crushed Tomatoes
1 Garlic Clove, minced
1/2 Onion, chopped
1/2 tsp Fresh Ginger, grated
1 tsp Garam Masala
1/2 tsp Salt, or more to taste
1 TBSP Cilantro, chopped
1 or 2 TBSP Butter, (substitute olive or vegetable oil to make this vegan)
1 Pack Lotus Ramen Noodles

in.structions

  1. In a pot bring water to a rolling boil and add the ramen noodles.
  2. In a large pot, melt the butter (or heat oil if substituting) over medium high heat and add the chopped onion. Saute until the onion is golden brown and beginning to caramelize well, about 8 minutes.
  3. Add garlic and ginger, stir for 15-30 seconds until fragrant.
  4. Add both cans of black beans, the can of Tomatoes, the Garam Masala, and the salt.
  5. Simmer the mixture over medium heat, stirring occasionally until reduced and the liquid is nice and thick, about 15 minutes.
  6. Turn off heat and add chopped cilantro to finish, stir and serve over ramen noodles.

Dos Lunas Cheese

Dos Lunas is a specially aged raw cow’s milk cheese. Their milk comes from Stryk Farms in Schulenburg, TX, a grass-fed raw milk that helps create the amazingly creamy texture of their cheese.  A labor of love from multiple generations of the Avellan family, you can read the fascinating (and full) origin story here.  We’re in.love with their cheese and glad to offer it on special this week.
