Smoked Salmon Special & Earth Hour

All at once SXSW is behind us and Spring is upon us!  Thank you to everyone who helped make our 4th in.sessions a success, despite the less-than-ideal weather.  We were really honored to host so many talented and passionate artists on our porch (or under the pergola!), and thrilled to provide a “local’s south by” experience for so many of you.  See below for a full recap including some photos.

Weekly Recipe

Smoked Salmon Tartines With Fried Capers

in.gredients

  • ½ small red onion, very thinly sliced
  • ⅔ cup Champagne vinegar or white wine vinegar
  • ¼ cup vegetable oil
  • 2 tablespoons capers, rinsed, patted dry
  • 8 slices country-style bread, toasted or grilled
  • 1 cup Full Quiver Plain Neufchatel Spread 
  • Kosher salt and freshly ground black pepper
  • 1 pound smoked salmon, flaked
  • 1 tablespoon chopped fresh chives
  • Olive oil (for drizzling)

  • Toss onion and vinegar in a small bowl; let stand at least 1 hour to pickle.
  • Heat oil in a small skillet over medium-high heat. Working in 2 batches, fry capers until opened and crisp, about 30 seconds. Drain on paper towels.
  • Spread toasts with Neufchatel and season with salt and pepper. Top with smoked salmon, drained pickled red onion, fried capers, and chives; drizzle with oil.
Do Ahead: Onion can be pickled 1 day ahead. Cover and chill.

On March 28th, in.gredients will be turning off (nearly all of) our lights in honor of “Earth Hour,” a worldwide effort to #ChangeClimateChange. Join us for an hour of candlelit shopping and climate change awareness or participate at home with your own roommates/family.  Together we can “use our power to change climate change.”

Wine of the Week: Duchman 2012 Trebbiano

One of the most widely planted varietals in the world, Trebbiano is found in over one third of the white wine DOCs in Italy and is a primary ingredient in the production of fine Cognac. Trebbiano has found a new home in the High Plains of Texas, and this rising star is one of the most exciting wines in our lineup. Exotic fruit aromatics and wonderful acid structure are hallmarks of Duchman Trebbiano.

Monthly profiles of some of our favorite vendors
Celtic Seafare

Sebastien Caillabet’s culinary adventures began while growing up in Ireland, where he developed an appreciation for fine foods. His family comes from a long lineage of chefs and restaurateurs specializing in all kinds of cuisines. It was in his father’s French restaurant that he developed a taste for traditional Irish smoked salmon, always a staple on the menu.

At 16, Sebastien started as a “stagier de cuisine,” spending summers working in the kitchens of well-known restaurants throughout France and Ireland. Similar to modern-day apprenticeships, he worked his way up from washing dishes, chopping parsley and de-bearding mussels to actually working the lines and preparing food. He then moved to Los Angeles and continued working in restaurants while attending school. For the next 18 years, he worked in the Hollywood film industry as a special effects technician. It was here he met the love of his life, Stephanie.

After moving to Austin, Texas in 2003, Sebastien continued to crave the silky, fresh-tasting smoked salmon he enjoyed as a young boy back in Ireland. He searched unsuccessfully throughout Central Texas, finding lesser-quality smoked salmon filets, frozen and filled with additives and preservatives.

Soon he began smoking and curing his own salmon, always a treat for family and friends.

In 2011, he turned his passion into a career and opened Celtic Seafare, an boutique-style company in South Austin. He maintains the high quality of sustainable sourced Atlantic salmon by smoking hand-selected filets in small batches. He began distributing his delicious products to a group of local chefs, as well as directly to customers at farmers markets throughout the area.

The Austin community has embraced this Irish delicacy and a loyal customer base has grown, including many Scottish, Irish and English folks who enjoy a delicious taste of home. In 2013 Celtic Seafare was moved to a larger building in Dripping Springs, located just west of Austin, and includes a Friday night supper club where customers can bring their own beer or wine to wash down smoked salmon delicacies. The team now offers specialty retail and catering.

Sebastien and Stephanie pride themselves on being members of the community where they work and are happy to share their family’s special tradition.

Weekly Recipe

With so many people coming to town right now the perfect host/hostess is always on the lookout for a great meal to feed their guests. With breakfast being the most important meal of the day why not make it fun! Here’s a great, quick and tasty recipe to start the day and keep you ticking through the afternoon.

Chocolate Chip Pancakes

in.gredients

  • 4 tablespoons (1/2 stick) unsalted butter
  • 1 cup milk
  • 1 1/4 cups flour
  • 1 tablespoon sugar
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 eggs
  • 6 ounces semisweet chocolate chips, or less to taste
  • Butter, for cooking



 

in.structions

  • In a small saucepan, combine the butter and milk. Place over low heat just until warm and the butter is melted. Let cool slightly. In a bowl, combine the flour, sugar, baking powder, and salt; mix well.
  • In a large bowl, whisk the eggs with a fork. Whisk in the milk mixture. Add the dry ingredients and mix just until barely blended. Add the chocolate chips and mix.
  • Heat a griddle or large skillet over medium heat. Add about 1 teaspoon of butter and melt until bubbly. Ladle 3 tablespoons of batter for each pancake onto the hot surface and cook until bubbly on the top and golden brown on the bottom. Turn and cook until golden brown on the other side, about 30 seconds more. Repeat until all the batter is used up. Serve hot.

Cricker Crackers

Last night we had the pleasure of witnessing two intrepid Austin entrepreneurs take on the world of mainstream American television as contestants of the new Food Network show, “Food Fortunes.”  Cricker Crackers, the creation of two young Austinites that we’re proud to call regular customers,  are delicious paleo crackers made with cricket flour.  We were nothing short of in.spired by their plug for eating insects and “changing the global food system.” Though they didn’t land the big investment deal, they made a convincing and impressive pitch to the panel of judges (and millions of people watching live).  Congrats to Leah and Megan!  We can’t wait to count you among our community of local vendors working together to change the food system.

Weekly Recipe: Avocado Cream

It’s festival time in Austin and a lot of people are having guests come stay. Looking for a delicious way to entertain them? Look no further. Here’s a great recipe that’s a wonderful alternative to guacamole and will put smiles on any guest’s face. Super quick, incredibly easy, and absolutely delicious.

SERVINGS: MAKES ABOUT 3 CUPS

  • 2 ripe avocados, pitted, peeled
  • ½ cup sour cream
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons finely chopped fresh cilantro, plus leaves for serving
  • 2 tablespoons finely chopped fennel fronds, plus more coarsely chopped for serving
  • Kosher salt
  • Tortilla chips (for serving)
in.structions
  • Process avocados, sour cream, vinegar, oil, 2 Tbsp. cilantro, and 2 Tbsp. fennel fronds in a food processor until mixture is very smooth, light, and thick. Season with salt.
  • Transfer avocado cream to a small bowl and top with cilantro leaves and more fennel fronds. Serve with chips.

Meet (soon-to-be) Mr. and Mrs. Jones

This week marks a special occasion in the life of not only our store, but also two of our favorite regulars. Erin and Schuyler met here at in.gredients around the end of 2013 and, after a few short months of getting to know each other, soon found love. After some time, Schuyler popped the question to which Erin replied with a resounding “YES!” After a little deliberation, the obvious choice for the venue was in.gredients, where they had made so many memories before. They are an incredibly witty, intelligent, and sensible couple who always find a good way to make one another laugh. We were delighted that they asked us and are excited by the idea of our first wedding on the grounds. This weekend we are proud to usher them into the world – from our humble house – as man and wife.

Weekly Recipe: Creamy Potato Soup

This in.house recipe comes to you from Katy, our “Food Prep Ninja.”  Ask for a taste next time you’re in – we’ve got a hot batch on the burner this week!  Then take home the in.gredients and make some of this deliciousness for yourself.  

in.gredients:

  • 1lb Yellow potatoes, washed, peeled diced 3/4″
  • 1/2 Yellow Onion, diced small
  • 2 Stalks Celery, washed, split lengthwise 2 times, diced small
  • 1 T Better-Than-Bouillon Vegetable Base
  • 1/3 C Milk
  • 1T Flour
  • 3 T half and Half
  • 1 Qt water (boiling)
  • 1 t Outer Spice
  • 1 T Salt
  • 1 T Coconut oil
  • Bac’uns for Garnish

in.structions:

  1. Saute onions in coconut oil until translucent, add celery, cook until tender
  2. Dissolve bouillon in 1.5c water
  3. Add potatoes, bouillon, and the remaining water to pot.  Cook until potatoes are mostly tender, about 10 min.
  4. Whisk together milk and flour, and add to pot and cook 5 more minutes
  5. Use submersion blender to blend partially, retaining some chunky texture. 
  6. Add Outerspice and half and half
  7. Garnish each serving with Bac’uns

After last week’s quiz was thwarted by cold temps, we’re hoping to have better luck with Mother Nature this Thursday.  We aim to announce cancellations on Twitter and Facebook by 5:30pm day of at the latest.  This is a free and open event but please note that the content is not intended for children.  

First Friday Block Party: March 6th, 2015 5-9pm

We’re still monitoring the weather for this Friday’s Block Party.  We want to be sure lots of folks come out in support of the Literacy Coalition’s last block party.   For now it’s still a go, but keep your eyes on our Facebook event page for updates and possible postponements.

Roasted Pork Tenderloin withShrub Drinks’ Balsamic Cherry Pan Sauce

There’s nothing quite like a home cooked meal on a cold night in, so if you’re looking for a great meal to warm your heart, look no further. Here’s a great recipe from one of our vendors Shrub Drinks using their amazing Balsamic Cherry Shrub. For more ideas be sure to check out their other recipes here.

in.gredients:

  • 1 1-1 ½ pound pork tenderloin, trimmed and patted dry
  • salt and pepper
  • 2 tablespoons canola or vegetable oil
  • 2 large shallots, finely chopped
  • 1 large clove garlic, finely chopped
  • 3 tablespoons Shrub Drinks Balsamic Cherry Shrub
  • 1 ½ cup low sodium chicken stock
  • ½ cup dried cherries soaked in ¼ cup bourbon for ½ hour
  • 2 tablespoons unsalted butter
in.structions:

Preheat oven to 400 degrees.

Heat the oil in an ovenproof sauté pan. Season the pork with salt and pepper. When the oil is glistening, place the tenderloin in the pan and sear it until nicely browned on all sides. Place the pan in the oven to finish cooking the pork to an internal temperature of 145 degrees about 7 to 12 minutes. Take the pan out of the oven and remove the tenderloin to a plate and loosely tent the meat with aluminum foil. Strain the cherries, reserving the liquid. Set aside.

While the meat rests, place the pan over medium heat. Add the shallots and sauté until softened. Next, add the garlic and cook for a minute or 2 more. Be careful not to let the garlic get too brown or it will become bitter. Deglaze the pan with the ShrubDrinks Balsamic Cherry Shrub and the strained bourbon soaking liquid. It will reduce and begin to stick. Deglaze the pan again with the chicken stock, scraping up the browned bits on the bottom of the pan. Add the dried cherries. When it has reduced by about half, add any juices from the resting pork. Continue reducing to a sauce consistency. Off heat, swirl in the butter one tablespoon at a time to finish the sauce. Taste and adjust the seasonings.

Slice the pork on the diagonal about an inch thick. Place on a platter. Spoon some of the sauce over the top. Serve the remaining sauce at the table.

Wine of the Week: Duchman Vermentino

Vermentino is widely planted in Sardinia, Liguria, Piedmont and to a smaller extent in Corsica, Bolgheri, Languedoc, and Provence. Outside of Sardinia (and Texas), Vermentino is known by a variety on monikers including Pigato, Favorita, and Rolle. Vermentino is a late ripening varietal, and the resulting wines are typically aromatic, light, and possess a refreshing acidity. Duchman Vermentino is right at home with freshseafood, particularly shellfish and oysters. The beautiful acidity allows this wine to be a versatile pairing wine with a variety of lighter dishes. 

Coffee of the Month: Big Bend Coffee Roasters Mexico Chiapas

This month’s coffee is from one of our favorite non-Austin partners, Big Bend Coffee Rasters out of Marfa, TX. They roast this bright and crisp coffee to Full-City—their lightest roast—to emphasize its pleasant notes of chocolate, orange peel, and nut. Roasted any darker, the beans would lose the delicate brightness that makes it a favorite coffee for breakfast.

Farmer Sue
We sure are lucky to call longtime Cherrywood resident Sue White, “Farmer Sue.”  She’s known in gardening circles in Austin as one of the best backyard gardeners around.  And she’s got the garden and veggies to show for it.  Her own plot, just a block and a half down Walnut from in.gredients, is a veritable Eden built over the course of 20 years of gardening.  As of this past fall, Sue tends to the plot in our front yard, too, which means that nearly everything grown on-site (by Sue’s masterful and sustainable green thumb) ends up in our cooler for you to take home.  The only place you could find fresher, more sustainably-grown, and carbon-free produce is your own garden!

This Friday is our first Block Party of 2015 and we’ve got quite the event lined up.  Tiny Pies and Wunder-Pilz will both be on site sampling out their superb products, Fifth Dimensions will be in the yard with their mobile book truck, and some of our favorite musicians – Ethan and Jeff, and Brand New Key – will be providing live musical entertainment.  Come enjoy all of this in the company of your favorite neighborhood friends to support the Literacy Coalition, our current community partner.

This week we brought in a new artisanal pasta from the Houston area.  The folks at Tavola Pasta take great pride in their handmade process, which starts with organic semolina flour grown in North Dakota, and natural spring water.  Then they add local produce and extrude through bronze dies (rather than Teflon) before slowly air drying.  The result is a rich and flavorful pasta that will shine on its own or tossed with some Kitchen Pride “Baby Bellas” sautéed in a little bit of butter.  Get great deals on all of the above this week.  Bon appétit!

Cashew Milk Recipe

It’s pretty amazing what one cup of cashews can do! We’ve all heard of soy milk and almond milk, but have you ever heard of cashew milk? Here’s a super simple recipe that just might change your perspective on all nut milks.

Use this as a base in Thai food, soups, or even reduced to make a cream sauce.  Or just drink it straight! 

We love this recipe because it’s easy to make, easy to keep, and tastes deliciousWhen we say it’s easy, it’s kind of an understatement. Here’s your list of in.gredients:

1 cup Organic Raw Cashwes
2 oz of simple syrup (1:1 cane sugar & hot water)
3 cups filtered water
 

in.structions

  1. Soak 1 cup of cashews in 3 cups of filtered water for about an hour (20 mins with hot water if you want to speed it up)
  2. Put cashews & water in a blender and blend on high until the chunks of cashews are finely ground (about 5 mins)
  3. Strain the liquid through a nut milk bag, cheese cloth or muslin bag (nut milk bag works best)
  4. Sweeten as desired (or leave unsweet if you want to cook with it)

If you prefer a thinner milk, add a little more water during the blending process. If a heavier milk is desired, reduce the water by about a 1/2 cup.

Wine of the Week: Duchman Winery 2012 Dolcetto

Native to the Piedmont region of Italy, Duchman’s Dolcetto is grown in the deep soil on the Texas High Plains. The Dolcetto grape is thick skinned and naturally tannic. Through very careful handling and neutral oak aging, Duchman Dolcetto is a pure expression of the grape and the vintage. Dark fruit and red plum notes along with well balanced acidity are hallmarks of this wine.

It’s that time of year in Central Texas when one day you’re out in a t-shirt soaking up the sun (i.e. today) and the next you’re bundled up in everything you own to stay warm and dry (i.e. tomorrow night).  Our thoughts are with our intrepid farmers, who brave this volatility with courage and row cover.  Fingers crossed some of our favorite Texas veggies make it through this next cold snap.  Remember to water and cover your own sensitive outdoor plants (i.e. succulents, young trees, vegetables), and get yourself into the kitchen to stay warm!

“Wine” of the Week: Texas Keeper 2013 Gold Rush Cider

Texas Keeper says 2013 “created an apple like no other.” Its lemon-lime zing popped when they were tasting the apples as they came through the press and it stayed a zesty lemon-lime grapefruit right through fermentation. They kept the sugar slightly higher to balance out the GoldRush’s natural acidity to create a crisp and refreshing cider.   Enjoy on a sunny TX afternoon!

Coffee of the Month: New Sweden Coffee Ethiopia Duromina

With the new year comes a new roaster for our coffee of the month!  A sweet and fruited cup with peach/nectarine jammy flavors, berry notes, fruit juice acidity, and a raw sugar sweetness layered on a thick mouthfeel.  Excellent as a brewed coffee or single origin espresso.

Sinful Dark Chocolate Brownies

We borrowd this decadent recipe from our friends at Equal Exchange.  Prepare thyselves!

Preheat oven to 325F. Grease an 8 x 8 inch baking pan with oil and lightly dust with flour.

In a saucepan heat the oil and chocolate over low heat, stirring constantly until fully melted. Remove from heat. Stir in the remaining ingredients. Pour batter into pan and bake for 30-35 minutes. Let cool before cutting.

Makes 9 brownies.
