Daily Recipe: Red and Green Tomato Caprese Stacks

The bright colors and unique shapes inspire quite a few people to pull out their phone (or camera if you carry one of those around) and snap a few pictures.

It’s hard not to admire the perfection that is a ripe tomato.

We have three types of tomatoes at the store for you to ogle over. We have cherry tomatoes, red slicer tomatoes and green tomatoes. It only seems fair to feature a recipe featuring at least two of the three varieties.

First, let’s take a closer look at all that is wonderful about the tomato. This fruit (commonly mistaken for a vegetable) are excellent sources of potassium and several vitamins: folic acid, vitamin A, vitamin C and vitamin E.

Turns out that eating tomatoes can also help you burn fat (who knew?) Bioflavonoids, which are concentrated in tomato skin, may counteract inflammation and allergic reactions. When you reduce inflammation, you can make weight loss hormones, such as leptin, work properly.

The wonder of tomatoes just keeps going. Studies have indicated that when you eat tomatoes you potentially reduce the risk of ovarian cancer, digestive tract cancers, cardiovascular disease, asthma and chronic lung disease.

Luckily, we can eat this fruit almost all year long. This recipe is simple, beautiful and so mouth-wateringly delicious you’ll come back to it again and again.

Red and Green Tomato Caprese Stacks

  • 2 green tomatoes
  • 2 red tomatoes
  • 12 oz fresh mozzarella
  • 12 large fresh basil leaves
  • Balsamic vinegar for drizzling
  • Salt and pepper to taste

The original recipe calls for oven frying the tomatoes. We like this idea but we also like to leave the tomatoes raw, so the flavor stands on its own. Do whichever calls to you, or try both versions out to see which one floats your boat.

Slice tomatoes and mozzarella into 1/2-inch thick rounds. Assemble the stacks by alternating tomatoes, mozzarella and basil leaves. Finish it off with a drizzle of balsamic oil and salt and pepper.

Easy, fast and so delicious.
