About Munkebo Farm
Munkebo, where Germaine Swenson’s Great Grandmother was born in Sweden, means “the place where monks live”. She traveled to Sweden in 2009 and her newfound Swedish family brought her to the namesake of her current Texas farm. Her father and uncle had saved old letters from the late 19th century, which were written from the same farm as her current relatives (who still live on and manage a farm that has been in the family over 200 years).
Munkebo Farm sits about twenty miles East of Austin just North of the Colorado River in the post-oak savannah of eastern Travis county, where Germaine raises over four hundred Muscovy and Mallard ducks. They have free-reign of a large pond scattered with shade trees and plenty of space. They are fed a custom organic feed composed of San Angelo organic red winter wheat and a Coyote Creek mix. The wheat is soaked and sprouted so as to increase the protein content and digestibility.
